Yellow Rice with Shrimp and dill
- 2 cups jasmine rice rinsed and drained
- 1 pound shrimp deveined, peeled with tail on
- 2 tablespoon unsalted butter
- 2 tablespoon olive oil
- 1 cup minced fresh dill
- 2 garlic cloves, minced
- ½ teaspoon turmeric powder
- 2 ½ cups water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoons lemon zest
- 6 tablespoons lemon juice
- parsley for garnish, optional
- Heat the olive oil in a large skillet Add the rice to the pan and toss Cook the rice for 2-3 minutes, stirring often. Add the dill, turmeric, lemon juice, lemon zest, salt, and black pepper, water and bring to a simmer.
- Cover, reduce the heat to low, and cook for 20 minutes. After 20 minutes, remove the pan from the heat and let it stand covered for another 10 minutes.
- Heat large skillet until hot on medium heat. Add butter it should run easily but not sizzle or burn. Add shrimp and minced garlic to the skillet, making sure it doesn’t crowd, sprinkle salt and black pepper Cook shrimp on medium heat, about 3-4 minutes total, until pink in color.
- Fluff the rice Remove shrimp from the skillet add to rice. Garnish with parsley Serve immediately enjoy.
