Tuna & Green Bean & Potato Salad
This simple Tuna and Green Bean Salad is a delicious combination of tender baby potatoes, It’s loaded with canned tuna, cherry tomatoes, greens beans, slices of red onion, olives, with lemony dressing adds loads of flavor It’s great for a make ahead lunch or light dinner!
Tuna & Green Bean & Potato Salad
- 1 pounds baby potatoes
- 1 pounds green beans stems removed
- 2 5-oz cans tuna packed in water, drained
- 1/2 medium red onion thinly sliced
- 1/2 cup kalamata olives
- 1/2 cup cherry tomatoes halved
- 1/4 cup lemon juice
- 3 tablespoons olive oil
- 1 teaspoon lemon zest
- 2 garlic cloves minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- Boil the potatoes with skins on in a large pot of boiling water until tender, about 10 minutes.Drain and rinse under cold water to stop the cooking process. Let cool completely.
- Rinse the green beans and steam them in a double steamer pot over boiling water for 5 minutes, or until tender.Drain and let cool
- Place the potatoes, green beans in a large salad bowl along with the canned tuna, thinly sliced red onion, kalamata olives, cherry tomatoes.
- In a bowl whisk together the olive oil, lemon juice, lemon zest, minced garlic , salt and pepper. Pour the dressing over the salad and toss to coat. Serve immediately. enjoy.
