Tuna & Green Bean & Potato Salad

This simple Tuna and Green Bean Salad is a delicious combination of tender baby potatoes, It’s loaded with canned tuna, cherry tomatoes, greens beans, slices of red onion, olives, with lemony dressing adds loads of flavor It’s great for a make ahead lunch or light dinner!

Tuna & Green Bean & Potato Salad

  • 1 pounds baby potatoes
  • 1 pounds green beans stems removed
  • 2 5-oz cans tuna packed in water, drained
  • 1/2 medium red onion thinly sliced
  • 1/2 cup kalamata olives
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 2 garlic cloves minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  1. Boil the potatoes with skins on in a large pot of boiling water until tender, about 10 minutes.Drain and rinse under cold water to stop the cooking process. Let cool completely.
  2. Rinse the green beans and steam them in a double steamer pot over boiling water for 5 minutes, or until tender.Drain and let cool
  3. Place the potatoes, green beans in a large salad bowl along with the canned tuna, thinly sliced red onion, kalamata olives, cherry tomatoes.
  4. In a bowl whisk together the olive oil, lemon juice, lemon zest, minced garlic , salt and pepper. Pour the dressing over the salad and toss to coat. Serve immediately. enjoy.
