• ¼ cup bulgur wheat
• 1/2 cup cucumber diced
• 1 cup Roma tomatoes diced
• 1/2 cup green onions thinly sliced
• 2 cup parsley chopped
• 1/4 cup lettuce chopped
• 2 tablespoons olive oil
• 2 tablespoons lemon juice
• 1 teaspoon salt
• 1/2 teaspoon ground red pepper
- In a small bowl, whisk together olive oil and lemon juice until well combined. Then add the bulgur to the dressing and let it soak until it is soft, about 10 minutes.
2.Place the diced vegetables in a large bowl. Season with salt and ground red pepper. Then pour the bulgur and dressing mixture over. Gently toss to combine. Serve with lettuce enjoy.
