Summer Fruit Cake

Summer Fruit Cake
- 3 large eggs room temp
- 1 cup granulated sugar
- 1/4 cup vegetable oil
- 1/3 cup club soda
- 1 teaspoon vanilla extract
- 2 cups All-Purpose Flour
- 2 teaspoon baking powder
- ½ cup blueberries
- ½ cup cherries
- ½ cup strawberries sliced
- 1 peaches sliced into wedges
- Preheat oven to 375 degrees and make sure a rack is in the center of oven.
- Line an 8 inch-diameter cake pan with parchment paper and lightly coat with nonstick spray .
- In a large mixing bowl using electric hand mixer beat together eggs and sugar on high speed 4 minutes until thick add vegetable oil.
- In a separate small bowl, whisk together flour and baking powder and flour mixture to the batter, mixing on low speed just until incorporated.
- Add vanilla.With the mixer on low speed, add cup club soda, mixing until incorporated.transfer to prepared pan and even out the top with a spatula.
- Add berries and Fruit evenly over the top. Bake 40-45 min. until golden brown on top and a toothpick inserted in the center comes out clean.enjoy.
