STUFFED EGGPLANT
Stuffed Eggplant healthy dinner. These are ground beef stuffed eggplants pepper and tomatoes filling packed with flavors. and baked to perfection. this recipe very easy to make!
STUFFED EGGPLANT
- 6 eggplants
- 6 sweet green peppers
- 1 lb. ground beef
- 2 tablespoons olive oil
- 1 small onion finely diced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon allspice
- 1 teaspoon cayenne pepper
- vegetable oil to fry
Sauce - 1 ½ cups hot water
- 3 tablespoon tomato paste
- 1 tablespoon garlic powder
- Wash the eggplants, cut the long part of the stems
and .Split cut the eggplants partially, not all the way
from the sides and on the bottom. - Pat dry the eggplants with a kitchen towel and fry in hot oil. After you begin to see colors turn it gently and continue to fry until it has some light colors on all sides and soft. Drain the oil and transfer it to a paper towel.
- Prepare the filling. Heat olive oil in a pan. Cook onions until translucent. Add the ground beef and continue to stir until ground beef is fully cooked.add salt,black pepper,allspice,cayenne pepper. stir well and take the pan off the heat.
- Stuff the eggplants with the filling and place them in a baking pan.with sweet peppers
Preheat the oven to 375 F.Mix water and tomato paste,garlic powder well.Pour it all over the stuffed eggplants.Bake for 25 minutes. - Remove from the oven and Serve warm with white rice enjoy.
