STRAWBERRY LEMON BLONDIES
This strawberry blondie recipe is so easy to make from scratch. with fresh strawberries, and a slightly tart lemon flavor these blondies are the perfect dessert!
STRAWBERRY LEMON BLONDIES
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 large egg
- 1/4 cup fresh squeezed lemon juice
- 1 tablespoon Lemon Zest from one large lemon
- 2 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup diced fresh strawberries
GLAZE - 1 cup powdered sugar,
- 1 tablespoon strawberry puree
- 1 tablespoon lemon juice
- Preheat the oven to 350F.Line a 9 inch square baking pan with parchment paper.
- In the bowl of a standing mixer cream the butter, egg, sugar on medium for 2-3 minutes, until it is light and fluffy. add in lemon juice, lemon zest mix.
- Whisk together the flour, baking powder, and salt, and add to the wet ingredients, mixing until no more dry flour is present. Gently fold in the diced strawberries. Spread the mixture into your pan and spread out as evenly.
- Bake for 30-35 minutes, just until starting to turn golden around the edges and the center is set.
- Puree strawberries in a food processor or blender. Over a bowl, strain out the solid parts of the strawberry so just the liquid is left. Add the strawberry liquid, lemon juice, and powdered sugar to a bowl and mix until thoroughly combined and a glaze forms.
- Pour the glaze over cooled blondies and quickly spread it evenly using a knife or spatula. Let the glaze set before slicing enjoy.
