Split Pea Soup
- 3 cups split peas
- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 carrot, chopped
- 2 garlic cloves minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon curry
- 1/4 teaspoon of ground cumin
- 6 cups vegetable broth or water
- Chopped fresh parsley, for garnish
1. In a large pot, heat oil over medium heat. Once hot, add in onion, carrots. Sauté over medium heat until the veggies begin to soften, about 5 minutes. Add in garlic and cook for 1 minute.
2. Add in broth, split peas, curry, salt, black pepper and cumin. Bring mixture to a boil, reduce heat to a gentle simmer, and cook for 1 hour, stirring frequently.
3 .Remove soup from heat. Purée the soup with an immersion blender until
completely done.
4. season with more salt as needed. Serve hot, with crusty bread for dipping and lemon. garnished with parsley enjoy.
