Sweet Potato with Marshmallows

It’s just not a holiday dinner in my home without this scrumptious holiday yam bake with marshmallows on top. Yes, my family happens to LOVE the addition of the marshmallows to this holiday yam bake, and I aim to please!

Ingredients

  • 1 pound sweet potatoes
  • 3 tablespoons brown sugar
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons milk
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups mini marshmallows

Instructions

  1. Preheat the oven to 400.
  2. Line a sheet pan with foil, and place the sweet potatoes on it. Prick them with a fork, and then bake for 40-50 minutes, depending on their size. Test with a fork to ensure they’re done–their skins will start to collapse when they’re soft. Remove the sweet potatoes from the oven.
  3. Lower the oven temp to 350, and let the sweet potatoes cool for at least 20 minutes.
  4. Meanwhile, in a bowl, whisk together the sugar, butter, milk, cinnamon, and salt.
  5. Peel the sweet potatoes and add them to the bowl. Stir and mash everything together to combine.
  6. Spread the mixture into a small 20-ounce baking dish, and bake for 20 minutes.
  7. Remove the baking dish, scatter the marshmallows on top, and bake for another 5-10 minutes, until the marshmallows toast and become lightly golden brown. Serve immediately enjoy .
