SHRIMP CAKES
- 1 pound raw shrimp, peeled and deveined
- ¾ cup panko breadcrumbs
- ½ tablespoon garlic, finely minced
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- ¼ cup finely diced red bell pepper
- 1 teaspoon lemon zest
- 1/4 cup mayonnaise
- 1 teaspoon lemon juice
- 1 large egg
- ½ teaspoon black pepper
- ½ teaspoon kosher salt
- 4 tablespoon light olive oil
For the Sauce: - 1/2 cup mayo
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 garlic clove,finely minced
- Add the shrimp to the food processor bowl. Pulse until coarsely chopped.
- Transfer the shrimp to mix bowl Add panko breadcrumbs, garlic, red bell pepper, parsley,dill, mayo,lemon juice,lemon zest, egg and salt,black pepper.Mix just until combined.
- Shape the shrimp mixture into10 patties. In a large pan, heat olive oil over medium high heat. Cook the shrimp patties in a single layer for 4-5 minutes on each side until they turn golden brown. Serve immediately
- In a small bowl, add mayo and stir to remove any lumps. Add lemon zest, lemon juice, garlic and stir to combine enjoy.
