Tomato and White Bean Salad

Tomato and White Bean Salad is an easy, healthy dish to keep in your fridge for a quick lunch or light supper. Pair it with a side salad and you are good to go!

INGREDIENTS

215-oz cans cannellini beans, drained and rinsed
1 cupcherry tomatoes, halved
1/4 cupchopped fresh basil
1/4 cupchopped fresh parsley
1/4 cupcapers
1/4 cupolive oil
1lemon, juice
1/4 tspred pepper flakes
salt and pepper to taste

DIRECTIONS

In a large bowl, combine the cannellini beans, cherry tomatoes, basil, and parsley. Add the olive oil, lemon juice, red pepper flakes, salt, and pepper. Toss well.
Serve immediately or store in the refrigerator for up to 5 days enjoy .
