Loaded with fresh veggies  Chickpea Chopped Salad + Creamy Avocado Dressing

Ingredients

  • 15 oz. chickpeas, rinsed and drained
  • 1/2 small head red cabbage, chopped
  • 2 cups grape tomatoes, halved
  • 2 cups diced cucumber
  • 2 green onions, sliced
  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt
  • 1/2 fresh lemon, juiced
  • a small handful of fresh parsley or cilantro
  • 1 fresh garlic clove (optional)
  • sea salt and freshly ground black pepper

Instructions

  1. To make the creamy dressing add all dressing ingredients to a blender or food processor and pulse until smooth. Taste and adjust seasoning.
  2. Add all salad ingredients to a large bowl as shown, then drizzle the dressing on top.
  3. Gently toss to combine and enjoy!
