Arugula Salad with Tomatoes

I’m all about simple and fresh recipes. This Tomato and Mozzarella Arugula Salad with Lemon Garlic Vinaigrette is simple, fresh, and summery. I served it with a lemon garlic parmesan vinaigrette that I could seriously eat by the spoonful it’s so delicious.

INGREDIENTS

For the dressing:

  • 3/4 C OLIVE OIL
  • JUICE OF 2 LARGE LEMONS
  • 5 CLOVES GARLIC, ROUGHLY CHOPPED
  • SALT, TO TASTE
  • 1 TSP RED PEPPER FLAKES
  • 1/2 C GRATED PARMESAN CHEESE

For the Salad:

  • 6–8 C FRESH ARUGULA
  • 10 OZ CHERRY TOMATOES, SLICED IN HALF LENGTHWISE
  • 8 OZ FRESH MOZZARELLA BALLS
  • 1/2 red onion, thinly sliced

Instructions

To make the salad:

  • Combine arugula, tomatoes and mozzarella balls and red onion in large bowl or big plate.
  • Drizzle with half of dressing. toss to combine.
  • Drizzle with more of the dressing to your preference. Adding half at first helps ensure you don’t overdress the salad.
