ROASTED BUTTERNUT SQUASH

ROASTED BUTTERNUT SQUASH

  • 1 medium butternut squash
  • 5 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried Italian seasoning
  • ½ cup pomegranate
    Garlic Sauce
  • 1 cup Greek yogurt
  • 2 garlic cloves minced
  • juice of ½ a lemon
  • salt to taste
  1. Preheat oven to 400 degrees and grease a large baking sheet.Peel butternut squash slice down the middle lengthwise. Use a spoon to scoop out the seeds and Chop into 1-inch pieces and arrange in a single layer on prepared baking sheet.
  2. Drizzle olive oil over squash, then toss the squash to coat in the olive oil.Season with salt, pepper, dried Italian Season.
  3. Bake for 20 minutes until squash is very tender and begins to brown on the edges.when you Serve add pomegranate.

Garlic Sauce

  1. Mix all the ingredients together with a spoon. Refrigerate until ready to serve enjoy.
