Red Lentil Soup
This easy Red Lentil Soup is creamy, hearty simple, and easy to throw together. It’s my go-to meal is ready in 30 minutes and is so easy to make. You can make this healthy and delicious soup with just a handful of ingredients !
Red Lentil Soup
- 2 cups red lentils
- 1 tablespoon vegetable oil
- 1/2 cup onion chopped
- 1 small potato chopped
- 1 carrot chopped
- ½ teaspoon cumin
- ½ teaspoon curry
- ½ teaspoon red pepper
- 1 teaspoon salt
- ½ teaspoon black pepper
- 7 cups water
- Heat vegetable oil in a pot over medium heat.Saute.onion until golden Add in carrots
and potato cook for a couple of minutes. - To the onion and carrot, potato add the red lentils, salt, pepper, cumin, curry and black pepper. Stir well and cook for a minute.
- Pour in the water and bring the soup to simmer. Cook covered on medium heat for 20 minutes. Uncover and cook for another 10 minutes until the lentils are completely cooked.
- Blend the soup in the blender or using an immersion blender until it’s creamy and smooth Serve warm with a squeeze of lemon enjoy .
