Red Lentil Balls

These Armenian or Turkish red lentil balls our family recipe. Made with red lentils and bulgur, onions, parsley these lentil balls are usually served with lettuce and herbs. served as a snack and appetizer. They are quick to make and absolutely tasty!

(Red Lentil Balls)

• 1 cup red lentils
• 3 cups of water
• ½ cup fine bulgur
• 2 tablespoon olive oil
• 1/2 yellow onion chopped
• 1 cups fresh parsley chopped
• 1/2 cup green onion chopped
• ½ teaspoon salt
• 1/2 teaspoon crushed red pepper flakes

  1. In a sauce pan cook the lentils with 3 cups of water until they have absorbed the water and are cooked. Turn the heat off, add in the bulgur and cover with the lid. Let it sit for 20 minutes.

2.Heat olive oil in a frying pan and saute onion until golden.Turn the heat off.Place the red lentil and bulgur mixture in a large bowl. Add in the onion and mix.

  1. Add in the parsley, green onions, salt, crushed red pepper and mix well.
  2. Start shaping the lentil balls into long cylinders and place them on a platter.Chill for an hour in the fridge and serve with fresh lemon and lettuce enjoy.
