Profiteroles

These profiteroles are absolutely mouth watering! There are no words to explain the way they just melt in your mouth. is a lot easier than you think! My recipe uses a homemade pastry cream filling with drizzled chocolate!

Profiteroles

  • 1½ cups Water
  • ½ cup butter
  • 1 ½ cups all purpose flour
  • pinch of Salt
  • 6 eggs
    Pastry cream
  • 2 cups milk
  • 2 teaspoon vanilla extract
  • 4 egg yolks
  • 1/3 cup cornstarch
  • 1 cup granulated sugar
    Chocolate glaze
  • 4 oz chocolate semi sweet
  • 2 tablespoon butter
  1. Preheat oven to 400˚F. Line baking sheet with parchment
    paper.
  2. In a Medium saucepan, combine water,butter,salt. Bring just to a boil over medium heat then remove from heat and stir in flour all at once with a wooden spoon.One flour is incorporated, place back over medium heat stirring constantly
    minutes to release extra moisture and partially cook flour. A thin film will form on the bottom of the pan and dough will come together into a smooth ball.
  3. Transfer dough to a large mixing bowl and beat mixer on medium speed for 2 minute to cool mixture slightly. Add eggs, 1 at a time, allowing to fully incorporate between additions.Transfer the dough to a piping bag.
    Bake for 10 minutes in the center of the oven. Without opening oven, reduce temp to 325˚F and, bake 25 min until golden brown on top. Transfer to wire rack to cool completely.
  4. In a medium saucepan, add the granulated sugar, cornstarch, and salt,vanilla whisk well to combine. All at once, add in the egg yolks and whisk until smooth. Add in the milk and whisk until combined Place the pan over medium heat. Cook the mixture, stirring constantly with a whisk, until thick and creamy, about 10 minutes. Remove pan from heat Transfer the custard to a bowl and cover tightly with plastic wrap.Place bowl in the refrigerator for 1 hour, or until completely chilled and firm.
  5. Place the chocolate in a small, bowl Melt your chocolate chips and butter in the microwave for 30-45 seconds, until melted and smooth.
  6. Fill each cream puff with a few tablespoons of the Cream Filling replace the tops. Drizzle of the chocolate glaze on top of each. Serve at once, or keep cream puffs stored in the fridge for up to 3 days enjoy.
