Potato Salad
This simple potato salad!If you’re looking for dish that’s not short on flavor, this potato salad is for you!Made with a handful of ingredients like potatoes, red onions, and olives, this salad is drizzled with a light dressing that is made with aromatic spices and herbs!
Potato Salad
For the Salad:
- 2 pounds potatoes
- ½ small sized red onion thinly sliced
- 1 roasted red bell pepper chopped
- ½ cup cucumber pickles chopped
- ½ cup kalamata olives, pitted
- ½ cup chopped parsley
For the Dressing: - 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoon red wine vinegar
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- ¼ teaspoon black pepper
- Preheat oven to 400F. Line a sheet pan with parchment paper.
Place cubed potatoes on a baking pan. Sprinkle with pepper and salt. Drizzle olive oil over top and then use your hands to toss the potatoes, making sure every single piece is coated. - Bake uncovered, for 45 minutes, or until the potatoes are crispy.Turn once half-way through baking.Allow to cool for at least 15 minutes.

- to make the dressing.In a small bowl, mix olive oil, lemon juice,red wine vinegar, Dijon mustard,salt, pepper. Pour the dressing over the potato salad.Toss well to combine. Serve immediately enjoy.
