This simple potato salad!If you’re looking for dish that’s not short on flavor, this potato salad is for you!Made with a handful of ingredients like potatoes, red onions, and olives, this salad is drizzled with a light dressing that is made with aromatic spices and herbs!

Potato Salad

For the Salad:

  • 2 pounds potatoes
  • ½ small sized red onion thinly sliced
  • 1 roasted red bell pepper chopped
  • ½ cup cucumber pickles chopped
  • ½ cup kalamata olives, pitted
  • ½ cup chopped parsley
    For the Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoon red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  1. Preheat oven to 400F. Line a sheet pan with parchment paper.
    Place cubed potatoes on a baking pan. Sprinkle with pepper and salt. Drizzle olive oil over top and then use your hands to toss the potatoes, making sure every single piece is coated.
  2. Bake uncovered, for 45 minutes, or until the potatoes are crispy.Turn once half-way through baking.Allow to cool for at least 15 minutes.
  3. Add red onions,roasted red bell pepper, cucumber pickles, kalamata olives, and parsley to the bowl with the potatoes.
  4. to make the dressing.In a small bowl, mix olive oil, lemon juice,red wine vinegar, Dijon mustard,salt, pepper. Pour the dressing over the potato salad.Toss well to combine. Serve immediately enjoy.
