PORK TOSTADAS

Here’s a terrific recipe for your next weeknight dinner. Set out various toppings and garnishes so your family members can customize their own tostadas with the shredded pork. 

PORK TOSTADA

these are the most delicious things we’ve made to date! We may be partial to Mexican food, but our Incredible Pork Tostada recipe is where it’s at! These tostada’s are crispy, filling and packed with so many wonderful flavors! Layers of amazing, delicious ingredients make for one of the best dinners you’ll have all year.

Ingredients

For Carnitas
½ cup orange juice
1 cup chicken stock
2 pounds pork loin
1 tablespoon cumin
1 tablespoon chili powder
2 teaspoons dried oregano
½ teaspoon dried garlic
½ teaspoon smoked paprika
1 tablespoon olive oil for broiling

Instructions

  1. Stir together orange juice, chicken stock and in a small bowl and pour into pressure cooker. Place pork tenderloin in the pressure cooker and sprinkle dry spices on top. Lock lid and close vent valve. Press “Manual”setting for 40 minutes.
  2. Once timer goes off, allow pressure to naturally release before opening vent valve. Remove lid and shred pork with two forks on a cutting board. Turn oven to broil. Transfer shredded pork to a baking pan and pour ½ cup of juices from the pot over pork. Drizzle with olive oil and broil for 7-10 minutes, until pork is lightly crisped on top.
  3. Serve shredded pork over on a tostada. Top with whatever you like enjoy.
