POMEGRANATE SALAD
- 1 cup Pomegranate seeds
- 2 Roma tomatoes, small diced
- 1 English cucumber, small diced
- 1/2 cup yellow onions finely chopped
- 1/2 jalapenos (optional) chopped into small pieces
- 3 tablespoon chopped fresh parsley
- Salt and pepper
- Juice of 1 large lemon
- 2 tablespoon olive oil
- In a large bowl, place the Pomegranate seeds diced tomatoes, cucumbers, onions, and jalapenos .
- add fresh parsley and a generous pinch of salt and pepper, lemon juice,and olive oil. Toss to combine.
- If you have the time, cover and chill this salad in the fridge for 30 minutes for best taste enjoy.
