Oatmeal Raisin Cookies
These Oatmeal Raisin Cookies are super soft, thick, and loaded with oats and raisins. once you try it, you’ll never go back to another recipe to make anytime of year, but especially popular in our house during the holiday season!
Oatmeal Raisin Cookies
- 1 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 11/2 cups oats
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 8 tablespoon unsalted butter (softened)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup raisins
- In a large bowl, whisk together the flour, cinnamon, baking soda. Stir in the oats and set aside.in a large mixing bowl beat the butter, brown sugar, and granulated sugar together for 1 to 2 minutes or until well combined. Add the egg and vanilla extract and mix until fully .
- Add the dry ingredients and continue mixing on low speed until just combined, then mix in the raisins.
- Preheat the oven to 350°F. Line baking sheets with parchment paper and set aside. Using cookie scoop, scoop the cookie dough and drop onto the prepared baking sheets.
- Bake for 10 to 12 minutes or until the edges of the cookies are lightly golden brown and the tops are set. Remove from the oven and cool on the baking sheets for 5 minutes enjoy.
