Lasagna Roll Ups
- 12 lasagna noodles
- 1 lb ground beef
- 24 oz marinara sauce
- 1/2 cup diced onion
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon ground fennel seed
- 1 teaspoon red pepper flakes
- 1 teaspoon oregano
- 15 oz ricotta cheese
- 1 large egg
- 1 cup parmesan cheese, shredded
- 2 cups mozzarella cheese, shredded
1.Preheat oven to 375 degrees.
- Boil lasagna sheets according to package instructions for al dente. Drain and separate lasagna sheets. Set aside.
- In a small bowl, mix together ricotta cheese, egg, 1 cup parmesan cheese, 1 cup mozzarella cheese.
- In a deep pan over medium-high heat, cook ground beef until no longer pink. Add onion and cook until softened 2 minutes. Add garlic, salt,pepper,fennel seed,oregano,red pepper flakes and sautee 2 minutes. Add marinara sauce, bring to a simmer and turn off the heat. Spread 1/2 cup meat sauce over the bottom of a casserole dish.
- Make the lasagna roll ups by laying out each
sheet of lasagna and spreading about 2 tablespoons of the
ricotta mixture onto each sheet. Add 2 tablespoons of
meat sauce in a strip down the center of the noodle. Roll
noodles up and arrange in the prepared dish. - Spread remaining meat sauce over the tops of roll ups and sprinkle on the remaining 1 cup mozzarella cheese. Cover with foil.
- Bake covered at 375˚F for 40 minutes. Remove foil and bake another 5 minutes or until cheese is lightly golden and serve enjoy.
