Lamb Meatball with Tomato Sauce

Delicious Tender Lamb Meatballs Curry – juicy tender meatballs with flavour packed tomato sauce and curry Serve these juicy meatballs with Tzatziki Sauce !

For the meatballs:

  • (14oz) of lean lamb mince
  • 1 red chilli, finely chopped
  • 2 clove of garlic, crushed
  • 1 tablespoon oregano
  • salt and black pepper
  • 1 egg

For the sauce:

  • 2 tablespoon  olive oil
  • 1 medium yellow onion, minced
  • 2 tsp fresh garlic, crushed
  • 2 (14.5 oz) cans diced tomatoes juice included
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon curry
  • 1/4 teaspoon crushed red pepper flakes
  • kosher salt and freshly-ground black pepper
  • 2 teaspoon granulated sugar

1.In a large bowl, add the lamb mince 1 finely chopped red chilli, 1 clove of garlic, salt, pepper and 1 egg and bind it all together well.

2. Form into equal sized meatballs Spray a frying pan with some spray oil, and brown the meatballs. Then set aside.

MAKE THE TOMATO SAUCE

3.Add the olive oil to the dutch oven you used for the caramelized the onions. Heat over medium heat until shimmering, then add the onion, and cook, stirring occasionally, until just beginning to soften, about 3 minutes. Add the fresh garlic, stir to combine, and cook another 2-3 minutes, until golden.

4. Add the tomatoes (with juice) and spices, and stir to combine. Cook for 4-5 minutes, until bubbling,and add curry sugar. Turn the heat down to low, partially cover (leaving about a half-inch gap) and simmer, stirring occasionally, for 20-30 minutes.

5.Transfer meatballs to the dutch oven, nestling the meatballs into the tomato sauce, and simmer until completely cooked through, about 10-15 minutes.

6. Top with some freshly chopped coriander Serve with your choice of sides enjoy .
