French Onion Soup

French Onion Soup
- 2 tablespoons butter
- 5 large yellow onions , thinly sliced
- 2 Tablespoons all purpose flour
- 1 cloves garlic , minced
- 1/2 cup red wine
- 32 ounces beef broth
- 1 cup water
- 2 sprigs fresh thyme
- salt and black pepper,to taste
- slices of French bread
- 1/4 cup shredded Mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- To a large pot, add the butter, onions, salt, pepper, toss to coat, and cook over medium heat for about 20 minutes until onions have softened and are caramelized.
- Add the garlic, flour beef broth water wine thyme, bring to a simmer, cover, and allow soup to maintain a low simmer for about 20 to 30 minutes, or until broth has reduced slightly and thickened.
- Ladle soup into oven-safe bowls, top each bowl with a slice of bread, about 1/3 cup cheese per bowl or as desired, places bowls on a sheet pan, and broil for about 1 to 3 minutes, or until cheese has melted and is as dark as desired. Watch cheese closely so it doesn’t burn. All broilers vary in intensity and serve immediately enjoy .
