FOCACCIA with OLIVE,TOMATO ,SALAMI

This focaccia is simple to make and one of our family favourites. I have taken this traditional Italian bread and have given it a Cypriot twist topped with Olive, sliced sun-dried tomatoes, Salami and fresh herbs. such a simple bread recipe to make, but the flavor is outstanding!

FOCACCIA with OLIVE,TOMATO,SALAMI

Dough:

  • 1 1/2 cups warm water
  • 1 tablespoon instant yeast
  • 1 teaspoon sugar
  • 2 tablespoons olive oil
  • 1 teaspoons salt
  • 3 1/2 cups all-purpose flour
    Toppings:
  • 1/2 cup green olives
  • ½ cup sliced sun-dried tomatoes
  • Salami
  • 4 tablespoons olive oil
  • 1 tablespoons chopped rosemary
  • 1 tablespoon chopped oregano
  1. Drizzle about 2 tablespoons olive oil into a 9″ x 13″ pan.Combine all of the Dough ingredients, and beat at high speed with an electric mixer for 60 seconds.
  2. Scoop the sticky batter into the prepared pan, cover the pan, and let it rise at room temperature for 60 minutes.
  3. While the dough is rising, preheat the oven to 400°F .Gently poke the dough all over with your index finger.
  4. Drizzle it lightly with olive oil and Add dried tomatoes,salami,green olive, rosemary and oregano.
  5. Bake the bread until it’s golden brown, 30 minutes. Remove it from the oven. Serve warm or at room temperature. enjoy.
