These easy Focaccia Muffins are perfect for lunch or dinner. They are a great addition to any meal. Made with olive oil, fresh rosemary, and salt. These delicious mini focaccias are herby, crispy on the outside, golden brown.so good!
Focaccia Muffins
- 2 cups all purpose flour
- 2 teaspoons quick rise instant yeast
- 1 teaspoon sugar
- 1/2 teaspoon kosher salt
- 1 cup warm water
- 2 teaspoons fresh thyme, finely chopped
- 2 teaspoons fresh rosemary, finely chopped
- 2 Tablespoon extra-virgin olive oil
1.Preheat oven to 375F . Set a 12-cup muffin tin on top of a baking sheet and set aside.
In a large bowl with a spoon stir together flour, yeast, thyme, rosemary, sugar and salt. Add water and olive oil. mix 1 minute. Dough will be very batter.
- In a standard muffin pan, pour 1 teaspoon of
olive oil into each muffin cup.½ scant cup extra virgin olive oil. then
divide dough among 12 greased muffin cups. Let rise,
uncovered, in a warm place until doubled, about
30 minutes. - in a small saucepan over medium-low heat, stir together remaining oil and herbs just until herbs are fragrant and oil is hot, about 1-2 minutes. Remove from heat and let cool.
- When rolls have doubled, gently spoon cooled herb mixture over each roll. Sprinkle with a bit more salt. Bake until golden brown, about 25 minutes enjoy.
