Eggplant Stew
- 2 medium-sized eggplants cut into cubes (about same size as beef)
- 1 pound beef chuck or boneless short rib,cut into large cubes
- ⅓ cup olive oil
- 1 medium onions, chopped
- 1 green pepper, chopped
- 4 Roma tomatoes, chopped
- 3 cloves garlic grated
- 1 teaspoon tomato paste
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- 1 teaspoon curry powder
- ½ teaspoon red pepper flakes
- 1 cup water more as needed
- Add olive oil over medium high heat into a large pot, brown the eggplant on all sides. Remove the eggplants from the pot and set aside.
- Season your beef with salt and pepper and place in the pot over medium high heat. Brown all sides of beef.
- Move beef over to one side of the pot, add the onions,green pepper, garlic and sautee over medium heat for 3 minutes. Add the tomato and tomato paste and stir in, cook for a couple of minutes.
- Add the salt, pepper, curry,red pepper flakes and water cover. Simmer for 20 minutes.
- After 20 minutes, add eggplant into the pot, stir in and cover Simmer for 10 more minutes. Serve with bread or rice enjoy.
