EGGPLANT SALAD RECIPE

This eggplant salad is delicious. with Charred eggplant Made with fresh tomatoes, cucumbers, bell peppers, herbs and spices. key ingredients include olive oil, lemon juice and sumac. So simple to make refreshing and delicious!

EGGPLANT SALAD RECIPE

  • 2 large eggplants
  • 1 red bell peppers
  • 1 green bell pepper
  • ½ red onion finely diced
  • 1 large tomato finely diced
  • 1 cucumbers diced
  • 2 cloves garlic minced
  • ½ cup fresh parsley chopped
  • ¼ cup olive oil
  • 1 lemon juice
  • 2 teaspoon sumac
  • 1 teaspoon crushed red pepper
  • 1 teaspoon dry mint
  • 1 teaspoon kosher salt

1.Pierce the eggplants a few times using a fork. Turn on the gas stove to medium high and place the eggplant directly on the range. Char the eggplant for about 15 minutes, flipping every 5 minutes for all parts to cook evenly.

  1. Place the red bell peppers on the stove as well to char. Flip occasionally so they char evenly.
  2. Place the charred eggplants and peppers in a bowl and cover with a plastic wrap. Let them sit for 15 minutes. Gently peel the eggplants and pepper.
  3. Finely chop peeled eggplants and red bell pepper and add them to a bowl diced onion, tomato, cucumber, green bell pepper and garlic and parsley.
  4. Add olive oil, sumac, lemon juice,dry mint,crushed pepper and
    salt. Stir to combine.Transfer to a serving platter and top with the
    1 tablespoon of the olive oil enjoy .
