INGREDIENTS
- 2 tablespoons vegetable oil
- 1 1/2 pounds gold potatoes, peeled and cut into 1/2-inch cubes
- 1/2 cup finely chopped onion
- 1 (12-ounce) can Spam, cut into 1/2-inch cubes
- 1/2 teaspoon freshly ground black pepper
DIRECTIONS
- Heat the oil in a large skillet over medium-high heat. Add the potatoes, onion, Cook, stirring occasionally, for about 8 minutes or until the potatoes are lightly browned.
- Add the Spam, and pepper. Continue to cook, stirring occasionally, for about 4 more minutes or until the potatoes are tender and the Spam is lightly browned.
