Couscous with Mini Sweet Peppers

This Couscous recipe with mini sweet peppers uses whole wheat couscous. This super-easy side dish can be served warm, also delicious chilled and served as a salad!

Couscous with Mini Sweet Peppers

  • 1 cup couscous
  • 4 tablespoon olive oil
  • 1 ½ cups chicken broth
  • ½ cup diced Mini Sweet Peppers
  • 1 teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper
  • chopped fresh parsley for garnish
  1. Heat the olive oil in a medium saucepan over medium heat add the diced Mini Sweet Peppers and cook, stirring frequently, until fragrant, about 2 minutes.
  2. Add salt, pepper and chicken broth. bring to a boil over high heat and cook until the peppers just begin to soften,3 minutes. Stir in the couscous, immediately cover and remove from the heat. Let stand, covered, until the liquid is absorbed and the couscous is tender, about 8 minutes.
    3.Transfer to a platter or large bowl and Garnish with parsley and serve enjoy.
