Couscous
- 2 cups whole wheat couscous
- 1/2 cup vermicelli noodles
- 3 tablespoons butter
- 1 cinnamon stick
- 2 whole cardamom pods
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 4 cups low-sodium vegetable broth or chicken broth
- 1/2 cup golden raisins
- 1 canned garbanzo beans, rinsed
- n a large skillet, melt the butter over medium heat. Add vermicelli noodles.and cook for 2 minutes You have to stir them frequently to achieve the golden brown color.
- Add the salt, pepper,cinnamon stick,cardamom,cumin and cook for 30 seconds.
- Pour in the broth. Increase the heat to high and bring it
to a boil. As soon as the liquid begins to boil, remove the
pan from the heat. Stir in the couscous and garbanzo
beans, cover, and let sit for 20 minutes. - With a fork, fluff up the couscous. Add the raisins then stir the ingredients together to combine serve hot enjoy.
