Corn Salad

Corn Salad is a summertime classic. Made with fresh corn off the cob, herbs, vegetables and a light dressing. Perfect as a hearty side dish or light lunch this salad is easy to make, and perfect for any occasion!

Corn Salad

  • 2 cups corn
  • 1/2 a small red onion, diced
  • 2 roma tomato, diced
  • 1 cup cucumber, diced
  • 1/2 red bell pepper,diced
  • 2 tablespoon cilantro,minced
  • 2 tablespoons olive oil
  • 2 tablespoon lime juice
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  1. bring a large pot of water to a boil, lightly salting it. corn, put it in the boiling water. Bring the water back to a boil, and then cook for five minutes. Remove the corn and cut it from the cob.
  2. Add the corn, cucumber, red onion, tomatoes, red bell pepper,cilantro in a bowl.
  3. In a small bowl whisk together the olive oil,lime juice, salt, and black pepper. Pour over salad.Toss to combine.Serve immediately enjoy.
