Corn Salad is a summertime classic. Made with fresh corn off the cob, herbs, vegetables and a light dressing. Perfect as a hearty side dish or light lunch this salad is easy to make, and perfect for any occasion!
Corn Salad
- 2 cups corn
- 1/2 a small red onion, diced
- 2 roma tomato, diced
- 1 cup cucumber, diced
- 1/2 red bell pepper,diced
- 2 tablespoon cilantro,minced
- 2 tablespoons olive oil
- 2 tablespoon lime juice
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- bring a large pot of water to a boil, lightly salting it. corn, put it in the boiling water. Bring the water back to a boil, and then cook for five minutes. Remove the corn and cut it from the cob.
- Add the corn, cucumber, red onion, tomatoes, red bell pepper,cilantro in a bowl.
- In a small bowl whisk together the olive oil,lime juice, salt, and black pepper. Pour over salad.Toss to combine.Serve immediately enjoy.
