Chickpea Salad

Chickpea Salad full of flavors that’s super fresh, and with simple vegetables quick and easy to prepare. perfect healthy lunch or a dinner side dish!

Chickpea Salad

  • 2 cups cooked chickpeas
  • ¼ cup red onions diced
  • 1 cup halved cherry tomatoes
  • 1 diced Persian English cucumber
  • 1/2 cup Red bell pepper diced
  • 1 teaspoon jalapeno finely diced
  • 2 tablespoon fresh mint finely chopped
  • 2 tablespoon fresh parsley finely chopped
    Dressing:
  • ⅓ cup olive oil
  • 1 lemon juice
  • 1/2 teaspoon honey
  • 1/2 teaspoon lemon zest
  • 1 garlic cloves mashed
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  1. into a large bowl. Add chickpeas, cucumber, tomatoes, red onion,red bell pepper,jalapeno, parsley and mint.
  2. To prepare the dressing, whisk together all the ingredients for the dressing in a small mason jar until emulsified.
  3. pour the dressing on top of the salad and mix serve and enjoy.
