Chicken Pot Pie with Flaky Phyllo Crust

  • 1 frozen pie crust
  • 1 16oz box of Phyllo Dough
  • 2 tablespoons butter
  • 1 small onion diced
  • 2 celery diced
  • 1 carrots diced
  • 1 cup frozen peas
  • 1 cloves garlic , minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
    1/2 teaspoon nutmeg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 2 tablespoon all-purpose flour
  • 2 cups chicken broth
  • 2/3 cups whole milk
  • 2 cups cooked chicken
  • ¼ cup butter for Phyllo Dough
  1. Preheat oven to 375 F. In a large skillet, melt the butter over medium-high heat. Stir in the onion, celery, and peas and carrots, garlic, salt, pepper, nutmeg
    and thyme. Cook for about 5 minutes until vegetables are tender and onions are soft.
  2. Stir in the flour until dissolved and cooked off.Slowly pour in the chicken broth and milk. Simmer over medium low heat, stirring frequently, until thick, about 5 minutes. Add in the cooked chicken pieces. Remove from the heat.
  3. Roll out one of the prepared pie crust into a 9 inch pie plate.Add the filling to the pie crust then cover with top with small, loosely balled up sheets of Phyllo dough Brush phyllo dough balls with melted butter.
  4. Bake until Phyllo dough are golden brown and the filling is bubbly, about 30 minutes.
  5. Remove from oven and allow cool for 10 minutes. Serve and enjoy.
