Chicken Pot Pie with Flaky Phyllo Crust
- 1 frozen pie crust
- 1 16oz box of Phyllo Dough
- 2 tablespoons butter
- 1 small onion diced
- 2 celery diced
- 1 carrots diced
- 1 cup frozen peas
- 1 cloves garlic , minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
1/2 teaspoon nutmeg - 1/4 teaspoon garlic powder
- 1/4 teaspoon thyme
- 2 tablespoon all-purpose flour
- 2 cups chicken broth
- 2/3 cups whole milk
- 2 cups cooked chicken
- ¼ cup butter for Phyllo Dough
- Preheat oven to 375 F. In a large skillet, melt the butter over medium-high heat. Stir in the onion, celery, and peas and carrots, garlic, salt, pepper, nutmeg
and thyme. Cook for about 5 minutes until vegetables are tender and onions are soft. - Stir in the flour until dissolved and cooked off.Slowly pour in the chicken broth and milk. Simmer over medium low heat, stirring frequently, until thick, about 5 minutes. Add in the cooked chicken pieces. Remove from the heat.
- Roll out one of the prepared pie crust into a 9 inch pie plate.Add the filling to the pie crust then cover with top with small, loosely balled up sheets of Phyllo dough Brush phyllo dough balls with melted butter.
- Bake until Phyllo dough are golden brown and the filling is bubbly, about 30 minutes.
- Remove from oven and allow cool for 10 minutes. Serve and enjoy.
