Chicken Pasta Salad Recipe

  • 1 pound rotini pasta
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped cucumber
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  1. Boil pasta according to the box directions. Drain and rinse with cold water.
  2. Season chicken breasts generously with salt, pepper.Heat a medium skillet over medium-high heat and cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let the chicken rest for 5 minutes before slicing into bite-sized pieces.
  3. Toss the cooled pasta in a large bowl.Add cucumber, tomatoes,fresh parsley, olives,red onion,chicken pieces.
  4. In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Season with salt and pepper to taste.
  5. Pour in the dressing and Stir until everything is well coated. Taste and season with a little salt and pepper if needed.Chill for at least 30 minutes before serving enjoy.
