Chicken Pasta Salad Recipe

Chicken Pasta Salad Recipe
- 1 pound rotini pasta
- 2 pounds boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 cup chopped cucumber
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted and halved
- 2 tablespoons fresh parsley, chopped
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Boil pasta according to the box directions. Drain and rinse with cold water.
- Season chicken breasts generously with salt, pepper.Heat a medium skillet over medium-high heat and cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let the chicken rest for 5 minutes before slicing into bite-sized pieces.
- Toss the cooled pasta in a large bowl.Add cucumber, tomatoes,fresh parsley, olives,red onion,chicken pieces.
- In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Season with salt and pepper to taste.
- Pour in the dressing and Stir until everything is well coated. Taste and season with a little salt and pepper if needed.Chill for at least 30 minutes before serving enjoy.
