Chicken Parmesan

Chicken Parmesan
- 4 chicken breasts , boneless
and skinless - 2 eggs
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 cup bread crumbs
- ½ cup grated parmesan cheese
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 8 ounces fresh mozzarella
- oil for frying
Marinara Sauce - 1/2 cup olive oil
- 1/2 yellow onion , diced
- 2 cloves garlic minced
- 28 ounces crushed tomatoes
- 2 tablespoon tomato paste
- 1 teaspoons oregano
- 1 teaspoon fennel seed
- 3 teaspoons basil
- 1 teaspoon salt
- 1 teaspoon honey
- 1 teaspoon crushed red pepper
- 1/2 cup water
- Mix the eggs,garlic powder,onion powder salt and
pepper in bowl.Mix the breadcrumbs and parmesan in
another bowl. - Heat oil in a pan over medium heat.Dip the chicken in the egg mixture, shaking off any excess.
place in the chicken into the breadcrumbs to coat on all sides and shake off any excess. - Cook the chicken in the oil until golden brown on both sides and place on a baking pan. add on the mozzarella and bake in a preheated oven 350F until the cheese has melted, about 5 minutes.
- marinara sauce Add the olive oil and onion to the pan and sauté on medium low. Add the garlic and let cook for 5 seconds. Add in the rest of the ingredients and simmer, covered, on low for 10 minutes.
- garnish with fresh basil and grated parmesan. Serve with pasta and sauce enjoy.
