Chicken and Rice Soup

Chicken and Rice Soup

  • 1 lb. chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup onion finely diced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1/2 cup frozen sweet peas
  • 1 cloves garlic minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1/3 cup long grain rice,
    uncooked
  • 9 cups chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon parsley for
    garnish
  1. Heat the olive oil, butter in a large saucepan over medium heat, add the onions, carrot, and celery, and cook until tender. about 3-5 minutes. Add the garlic and thyme and cook. about a minute.
  2. Add the broth, chicken, and rice, sweet peas, bring to a boil, reduce the heat and simmer, covered until the chicken is cooked through and the rice is tender, about 20 minutes.
  3. Remove the chicken from the soup. shred, and return it to the pot.
  4. Add the lemon juice and seasoning with salt and pepper Garnish with parsley and serve enjoy.
