Chicken and Rice Soup

Chicken and Rice Soup
- 1 lb. chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 cup onion finely diced
- 2 medium carrots diced
- 2 stalks celery diced
- 1/2 cup frozen sweet peas
- 1 cloves garlic minced
- 1 teaspoon fresh thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1/3 cup long grain rice,
uncooked - 9 cups chicken broth
- 1 tablespoon lemon juice
- 1 tablespoon parsley for
garnish
- Heat the olive oil, butter in a large saucepan over medium heat, add the onions, carrot, and celery, and cook until tender. about 3-5 minutes. Add the garlic and thyme and cook. about a minute.
- Add the broth, chicken, and rice, sweet peas, bring to a boil, reduce the heat and simmer, covered until the chicken is cooked through and the rice is tender, about 20 minutes.
- Remove the chicken from the soup. shred, and return it to the pot.
- Add the lemon juice and seasoning with salt and pepper Garnish with parsley and serve enjoy.
