Banana Cream Pie

  • 1 refrigerated pie crust
  • 3 tablespoons unsalted butter
  • 4 large egg yolks
  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • 3 tablespoons cornstarch
  • 1 ½ cups whole milk
  • 1 cup heavy cream
  • 2 teaspoon vanilla extract
  • 3 ripe bananas sliced
    HOMEMADE WHIPPED CREAM
  • ¾ cup heavy cream
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  1. Preheat the oven to 350°F. Bake the pie crust in a 9 inch deep dish pie plate according to the package directions. Cool completely.
  2. Heat the butter in a small saucepan over medium heat, whisk frequently. Continue to cook until melted. Remove from heat and set aside. Whisk the granulated sugar, egg yolks, salt, and cornstarch together in large bowl until smooth.
  3. Heat the milk and heavy cream in a medium saucepan over medium-low heat until steaming and bubble begin to form around the edges.While whisking continuously,add gradually and hot milk mixture the egg mixture. After all the milk has been added, return the mixture to the saucepan and cook over medium heat, whisking constantly, until thickened to the consistency of warm pudding,5 minutes.
  4. Remove from heat and whisk in the butter and vanilla. press the custard through a fine-mesh sieve into a bowl. Place plastic wrap directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 3 hours.
  5. Peel and slice the bananas about ¼- inch thick.Arrange half the bananas over the bottom of the crust. Spread half of the chilled custard over the bananas. Arrange the remaining bananas over the custard and top with the remaining custard.
  6. Once you are ready to serve prepare whipped cream. Combine heavy cream, powdered sugar, and vanilla extract in a large bowl and use an electric mixer to beat until stiff peaks form Dollop or pipe whipped cream over chilled pie and slice and serve. Enjoy.
