APPLE HAND PIES

These delicious Apple Hand Pies a sweet apple pie filling inside a buttery, flaky pie crust. So easy to make and perfect for fall. and Perfect for making ahead and taking along to parties and family get togethers!

APPLE HAND PIES

  • 3 tablespoons butter
  • 4 cups peeled, cored and thinly sliced apples
  • ¾ cup brown sugar packed
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoons ground nutmeg
  • ⅛ teaspoon salt
  • 1/3 cup cornstarch
  • 2 cups water
    Pie Crust
  • 2 1/2 cups all purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 sticks cold unsalted butter
  • 8 tablespoon ice water
  1. Add butter and apples to large, skillet over medium heat. Toss until apples are coated with melted butter.
  2. Stir in sugars, spices and salt. Bring to a simmer, then cook until apples are starting to soften, about 4-5 minutes.
  3. In the meantime, combine water, cornstarch until no lumps.Pour cornstarch mixture over the softened apples and carefully stir. Bring to a simmer, then simmer until filling has thickened and apples are tender. Cool before using.
  4. Place flour, sugar and salt into the bowl of a food processor and pulse a few times to combine.
    Add cold diced butter and pulse the mixture
    Add ice water and pulse just until moist clumps or small balls form.
    Transfer dough to a clean work surface, and gather dough together into a ball. Divide dough in half and flatten to form 2 disks. Cover with plastic wrap and refrigerate 1 hour before using.
  5. Preheat the oven to 400°F. Line 1 to 2 large baking sheets with parchment paper and set aside.
  6. Remove the pie crust from the refrigerator and evenly distribute the apple pie filling between half of them, making sure to leave some room at the edges. Place the other half of the pie crust circles on top. Brush the top of each pie with the egg wash.
  7. Bake for 20 minutes or until the pies are golden brown and the filling is bubbling. Remove from the oven and set aside to cool enjoy.
