BIRRIA RAMEN WITH BEEF

Birria Ramen with Beef made with a rich and flavorful broth that is served over ramen noodles!
For the Beef:
- 2 lb chuck roast beef
- salt and pepper to taste
- 3 tablespoon olive oil
- 3 bay leaves
- 4 cups beef broth
For the Sauce:
- 2 Dried Guajillo Chile Pods
- 2 Dried Ancho Chile Pods
- 1 cup water
- 1 teaspoon salt
- 2 teaspoon oregano
- 1 Cinnamon Sticks
- ½ yellow onion
- 3 Roma tomatoes sliced
- 3 cloves of garlic minced
- 2 tablespoon white vinegar
Toppings:
- Ramen noodles
- Lime
- Diced Onion
- Cilantro
For the Sauce:
- Boil 1 cup of water to hydrate the dried chiles. While the water is boiling, remove the stems and seeds from the chiles. Place the chiles in the hot water.
- Place a lid on the pot and let stand for 10 minutes, or until chiles are pliable. Add all the spices and rehydrated chiles, sliced tomatoes into a blender. Add 1 cup hot water from same water we use for dried chiles. Blend until smooth.
- Strain the sauce and set aside until ready to use.
To Cook the Beef:
- Heat oil in a instant pot on saute Season the beef on both sides with salt and pepper. Sear or saute the beef on all sides.
- Add the beef broth, bay leaves and sauce, white vinegar pressure cook for 1 hour.
Ramen:
- Cook the ramen per package instructions. Add the cooked ramen to a bowl and add a serving of the shredded birria beef.
- Add the broth until the ramen is covered in broth. Garnish with cilantro and diced onions and squeeze of lime and enjoy!
